Green Beans with Shallots

Fresh green beans with shallots is a simple yet tasty side dish to accompany any meal. In no time at all you can have a delicious vegetable ready for your family.

Ingredients
- 2 lbs fresh green beans
- Water - about an inch of water to cover the bottom of a skillet or cast iron pan
- 2 shallots - diced
- 3 tablespoons olive oil
- 6 tablespoons butter
- Salt and pepper to taste
Directions
- Step 1 Wash green beans and snap or cut the ends off of them. You can cut them in half but I like to serve them whole.
- Step 2 Put about an inch of water in the bottom of a skillet or a cast iron pan.
- Step 3 Place green beans in water or if you have a steam basket put them in that and then in water.
- Step 4 Cook on medium high heat.
- Step 5 Let the green beans steam for about 5 to 10 minutes from the time the water begins to boil, or until they have reached your desired level of tenderness.
- Step 6 Cook till your preference of bite – some like more of a snap in their green beans others prefer a softer consistency. You can test the tenderness of the green beans with a fork.
- Step 7 Once cooked to your desire, remove and place in bowl.
- Step 8 In the same pan drizzle olive oil.
- Step 9 Add diced shallots to pan.
- Step 10 Cook until tender – about 3 minutes.
- Step 11 Lower the temperature to low.
- Step 12 Return green beans to pan with shallots.
- Step 13 Add butter, salt and pepper.
- Step 14 Mix together and cook until butter is thoroughly melted.
- Step 15 Serve hot.
