Roasted Chicken Pasta Salad

This pasta salad is super easy to make. I put it together when I have leftover roasted chicken. Mixed together with some veggies, cheese, and a pesto salad dressing it makes for all in one lunch or dinner.

Ingredients
- 2 cups roasted chicken - I typically make this with my leftover chicken but you could easily buy a rotisserie chicken at the market and use that. Cut chicken into bite size pieces.
- 1 pint grape tomatoes - cut into fourths
- 1/2 red onion - diced
- 12 ounces of marinated mozzarella balls
- 1lb pasta - your favorite shape
- Parmesan Reggiano - grated
- Dressing
- 1/4 cup favorite jarred pesto
- 3 tablespoons olive oil
- 2 teaspoons lemon juice
- 1 teaspoon onion powder
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
Directions
- Step 1 Boil pasta according to directions.
- Step 2 While pasta is cooking make dressing. Combine pesto, olive oil, lemon juice, salt and pepper. Whisk thoroughly.
- Step 3 Once pasta is cooked rinse under cool water and drain.
- Step 4 Combine pasta, chicken, tomatoes, onion, mozzarella balls and mix together.
- Step 5 Pour dressing over pasta salad. Mix until well incorporated.
- Step 6 Grate Parmesan Reggiano over it.
- Step 7 Serve cold or room temperature.
