Linzer Cookies

The Linzer cookie is a classic buttery cookie sandwich filled with jam. Dusted with powdered sugar, it makes for a pretty and dainty dessert.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 3/4 cup granulated sugar
- 1/2 cup butter, room temperature
- 1 egg - I use jumbo
- 1 teaspoon vanilla
- Your favorite jam - I like to use black or red raspberry
- Powdered sugar
Directions
- Step 1 In a small bowl, combine flour, salt, baking soda.
- Step 2 In a mixing bowl, cream the sugar and butter on medium speed until light and fluffy.
- Step 3 Add egg and vanilla to butter sugar mixture. Beat.
- Step 4 Gradually add the flour mixture to it. Slowly beat together until dough forms into a ball.
- Step 5 Divide into two balls and place each piece of dough onto plastic wrap. Wrap up and press gently into a flat disc.
- Step 6 Refrigerate for at least 2 to 3 hours or until it is firm.
- Step 7 Preheat oven to 375 degrees.
- Step 8 Working with one portion of the dough at a time, roll out dough on lightly floured surface about 3/16 inch thick.
- Step 9 Using a floured cookie cutter, cut out equal number of shapes. Using a smaller shape, cut out center of half of the cookies.
- Step 10 Place cookies on ungreased baking sheet about 1 1/2 inches apart.
- Step 11 Gather remaining dough trimmings and reroll and cut out more cookies.
- Step 12 *If dough gets too soft, place back in the refrigerator to firm back up.
- Step 13 Bake cookies for 7 to 9 minutes or until the edges are lightly golden.
- Step 14 Remove and place on wire rack to cool completely.
- Step 15 Lightly dust the cookies with the holes with powdered sugar.
- Step 16 Take the whole cookies and spread your favorite flavored jam on the flat side.
- Step 17 Place powdered cookies on top of jam cookies.
- Step 18 Store in a tightly sealed container.
