Oatmeal Banana Cupcakes

What better way to kick start your child's morning than with these oatmeal banana cupcakes and a tall glass of milk? My mom used to make these for my sister and me. They are moist and tasty. Hope your children will enjoy them too.
Ingredients
- 1/2 cup sugar
- 1/2 cup light brown sugar
- 1/2 cup butter
- 2 eggs
- 3 large ripe bananas
- 1 teaspoon vanilla
- 1 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup quick-cooking rolled oats
Directions
- Step 1 In a mixing bowl, cream together sugar and butter. Scrape sides.
- Step 2 Add eggs, vanilla, and bananas and beat together.
- Step 3 In separate bowl combing flour, salt, baking powder, and baking soda.
- Step 4 Slowly add to creamed mixture, beating just until blended.
- Step 5 Stir in oats.
- Step 6 Spray muffin tins with non-stick spray.
- Step 7 Fill cups 2/3 full with batter.
- Step 8 Bake in a preheated 375 degree oven for 15 to 18 minutes.
- Step 9 Remove from the pans and cool on a wire rack.
