What better way to kick start your child's morning than with these oatmeal banana cupcakes and a tall glass of milk? My mom used to make these for my sister and me. They are moist and tasty. Hope your children will enjoy them too.

Ingredients
  • 1/2 cup sugar
  • 1/2 cup light brown sugar
  • 1/2 cup butter
  • 2 eggs
  • 3 large ripe bananas
  • 1 teaspoon vanilla
  • 1 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup quick-cooking rolled oats
Directions
  • Step 1 In a mixing bowl, cream together sugar and butter. Scrape sides.
  • Step 2 Add eggs, vanilla, and bananas and beat together.
  • Step 3 In separate bowl combing flour, salt, baking powder, and baking soda.
  • Step 4 Slowly add to creamed mixture, beating just until blended.
  • Step 5 Stir in oats.
  • Step 6 Spray muffin tins with non-stick spray.
  • Step 7 Fill cups 2/3 full with batter.
  • Step 8 Bake in a preheated 375 degree oven for 15 to 18 minutes.
  • Step 9 Remove from the pans and cool on a wire rack.
