Peach and Blueberry Crumble

The perfect summertime dessert. Made with ripe local peaches and blueberries, this crumble of brown sugar and butter will wow your family and guests!
Ingredients
- For Filling
- 8 to 10 large ripe peaches
- 1 1/2 cup of ripe blueberries
- Sprinkle with lemon juice
- 1/2 cup granulated sugar
- 1/4 cup flour
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- For Crumble
- 1 cup all purpose flour
- 1 cup light brown sugar - firmly packed
- 1/2 teaspoon of salt
- 1/2 teaspoon of cinnamon
- 1 stick butter - cold and diced
Directions
- Step 1 For Filling: Wash, peel and slice peaches into wedges.
- Step 2 Place in a mixing bowl.
- Step 3 Sprinkle juice of half a lemon over peaches to preserve color and add freshness.
- Step 4 Add sugar, salt, and cinnamon.
- Step 5 In a separate bowl, add 2 cups of washed and dried ripe blueberries. Remove stems.
- Step 6 Add 1/4 cup all-purpose flour to blueberries. This will coat the berries and help keep from falling to the bottom of your baking dish. It also thickens your fruit adding a richness.
- Step 7 Gently fold the berries into the peach mixture.
- Step 8 Pour into a 2 quart baking dish.
- Step 9 For Crumble: In a separate mixing bowl add all-purpose flour, light brown sugar, salt and cinnamon.Stir.Add cold butter.
- Step 10 With a knife, pastry blender or hands mix crumble. It should be slightly moist.
- Step 11 Sprinkle chunks of crumble over peach and blueberry mixture.
- Step 12 Bake in a 425 degree oven for 40 to 50 minutes until golden brown on top and fruit is bubbling.
- Step 13 Serve warm with vanilla ice cream.
- Step 14 To make individual servings place ingredients in ramekins and bake in a 425 degree oven for 20 to 25 minutes.
