These pumpkin chocolate chip cookies are soft, fluffy, and cake-like, hence the name. They are the perfect cookie for the fall. Made with pumpkin puree and hints of seasonal spice.

Ingredients
  • 1 15 oz can of pumpkin puree
  • 1 cup butter - room temperature
  • 2 cups sugar
  • 3 1/2 cups of flour
  • 2 eggs - room temperature
  • 2 teaspoons vanilla
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1/2 teaspoon kosher salt
  • 1 1/2 chocolate chips (mini morsels may also be used)
Directions
  • Step 1 Preheat oven to 375 degrees.
  • Step 2 In a mixer beat butter, sugar, and eggs. Add can of puree pumpkin. Beat until incorporated.
  • Step 3 In a mixing bowl add flour, baking soda, baking powder, cinnamon, and salt. Stir together.
  • Step 4 Slowly add dry ingredients to wet ingredients until blended together. Don’t over beat.
  • Step 5 Add chocolate chips and stir by hand making sure morsels are throughout batter.
  • Step 6 Chill for half hour to one hour.
  • Step 7 Scoop onto a greased cookie sheets about 2 inches apart and bake for approximately 12 to 15 minutes.
  • Step 8 Watch closely because they can over bake easily.
