Roasted Beets and Butternut Squash with Goat Cheese

This roasted vegetable dish is not only beautiful to look at but oh so tasty. The creaminess of the butternut squash, sweetness of the beets, and the tanginess of the goat cheese is a delicious medley.
Ingredients
- 1 lb peeled, chopped butternut squash
- 1 lb peeled, chopped beets
- 4 oz Chevre goat cheese
- Olive oil
- 2 tablespoons chives
- Salt and pepper to taste
Directions
- Step 1 Place peeled and chopped beets and butternut squash on sheet pan.
- Step 2 Drizzle with olive oil, salt and pepper and mix till all pieces are coated.
- Step 3 Bake in a 375 degree oven for 40 to 45 minutes or until fork tender.
- Step 4 Remove from oven and crumble goat cheese on top of vegetables.
- Step 5 Sprinkle chives over the mixture.
- Step 6 Serve hot.
