Stuffed Spaghetti Squash

Spaghetti squash is an excellent alternative to pasta. This vegetable holds up nicely with your favorite sauce and fills you up just like a spaghetti dinner. I love it roasted with just sautéed onions and garlic, but this recipe is perfect for a hardier meal.

Ingredients
- Spaghetti Squash
- 1 Small Vidalia Onion - diced
- 1 Garlic Clove - minced
- 2/3 cup Ricotta
- 1/2 cup Tomato Sauce
- Grated Parmesan to taste
- Olive Oil
- Salt and pepper to taste
Directions
- Step 1 Wash spaghetti squash, dry, and cut down the center lengthways.
- Step 2 Remove seeds.
- Step 3 Drizzle lightly with olive oil and sprinkle with salt and pepper.
- Step 4 Place flesh side down on a baking sheet and using a fork, poke vent holes.
- Step 5 Bake in 400 degree preheated oven for 35 to 40 minutes.
- Step 6 While squash is baking. Sautee onion and garlic in olive oil until translucent.
- Step 7 After squash is finished cooking take out of oven and flip over. Using a fork, flake the spaghetti squash.
- Step 8 Add onions and garlic to spaghetti squash, pour tomato sauce over them and then ricotta. Sprinkle with parmesan, salt and pepper. Broil for 5 minutes. Serve hot.
